Once again I was “pinspired” by a pancake recipe I found.
After a big grocery shopping trip yesterday I decided to give these pancakes a
try… and I am SO glad that I did! Heres the pin that started it all... Pancakes!
First off they were so easy to make (… yes
even Reilly, who considers cooking a chicken breast difficult, could tackle
these bad boys). You simply take 1 banana and mash it up. I mashed it with my
fingers before opening the peel and that seemed to make it easier. I peeled the
banana, put it in a bowl, mashed it up with a fork and then added two eggs. I
beat the eggs and the banana with a fork and it had a very weird consistency…
sort of like baby food. I poured a small bit of the batter into a regular pan
that I had prepped with coconut oil (olive oil would work here too) and
proceeded to cook them just like regular pancakes. VOILA! SO yummy and healthy!
Next time I am going to try them with just egg whites and see what happens.
Overall I was very pleased with these. I topped mine with some “I can’t believe
its not Butter” and a pinch of brown sugar and I was one HAPPY girl. Logan was
pretty impressed too :)
